Before joining Sazerac, Executive Chef Shawn Applin attended the Culinary Institute of America in New York, and joined several high-profile restaurants including Fog City Diner, Scala’s Bistro and Flying Fish, where he worked alongside James Beard Award–winning chef Christine Keff.
